Terroir Guide: Cau Dat (Da Lat, Lam Dong)
The High-Altitude Arabica Sanctuary of Vietnam
Cau Dat, a gorgeous highland area located just outside of Da Lat city in Lam Dong province, is the undisputed premier sanctuary of premium Arabica coffee in Vietnam. Rising to majestic altitudes between 1,400 meters and 1,650 meters above sea level, Cau Dat is blessed with a highland temperate climate, constant swirling mist, and fertile basaltic humic soils that rival the world's best Arabica growing zones.
Originally established by French agronomists in the early 20th century, Cau Dat has a long heritage of cultivating delicate Arabica varieties. The volcanic humic soil of the region is light, well-drained, and rich in organic matter, providing a perfect nutrient base for delicate varieties like Catimor, Bourbon, and Typica.
A Cool Mountain Terroir
The cool mountain climate is the secret behind Cau Dat's elegant flavor profile. With average temperatures hovering between a cool 14°C and 18°C, and nights that regularly drop below 10°C, the coffee cherries mature at an extremely slow pace. This extended growth cycle allows the organic acids inside the bean to develop fully, transforming simple sugars into a complex range of citric and floral compounds.
The geographic layout of Cau Dat features steep rolling hillsides that ensure excellent natural water drainage and varied sunlight exposure. In the early morning, dense fog envelopes the hillsides, shielding the young plants from harsh direct sunlight and preserving moisture.
Artisan Wet Processing & Clean Aesthetics
Cau Dat specialty Arabica is treated with extreme care. Because of the cooler damp weather, farmers utilize the **Fully Washed** processing method. Ripe red cherries are hand-selected, immediately pulped to remove the outer skin, and fermented in clean tanks for 18 to 24 hours.
After fermentation, the beans are washed with absolute precision to remove all remaining mucilage. The washed parchment coffee is then dried inside custom-engineered solar greenhouses. This protective drying shields the delicate beans from unexpected mountain rains and ensures an extremely clean, uniform moisture level of 12%, preventing defect formation.
Sensory Profile: Bright, Floral, and Sweet
Cau Dat Arabica presents a stark, beautiful contrast to the bold Robusta of the lower plateaus. In the cup, it is light, elegant, and highly aromatic.
The sensory experience begins with a fragrant bouquet of **jasmine flowers and wild honey**, followed by a crisp, bright citrus acidity that mimics ripe lemons and green apples. The body is light to medium, ending with a sweet, tea-like finish that leaves the mouth feeling clean and refreshed. It is a stunning showcase of Vietnam's agricultural diversity, proving that the highlands can produce Arabica of exceptional international quality.
🍒 Artisan Harvesting & Processing
Hand-picked selective harvesting, followed by immediate pulping and wet fermentation. The beans are washed thoroughly in clean highland spring waters and dried in controlled solar greenhouses to preserve crisp acidity.
