Sustainable Agroforestry & Forest-Shade Terroir

Dak Nong province, situated south of Dak Lak in the Central Highlands, represents the future of sustainable, eco-friendly coffee farming in Vietnam. Rising to a high basaltic plateau between 700 meters and 900 meters, Dak Nong's terrain is characterized by rolling hills, high wind exposure, and a complex network of forest reserves.

Unlike monoculture farming systems, Dak Nong coffee is celebrated for its integration within **sustainable agroforestry systems**. Farmers here crop their Robusta trees under a diverse forest-shade canopy consisting of native trees, pepper vines, macadamia, and avocado trees. This multi-layered forest canopy protects the soil from erosion, preserves groundwater levels, and attracts natural insect predators, eliminating the need for chemical pesticides.

Micro-Climate & Soil Composition

The soil in Dak Nong is formed from weathering basalt rock, offering excellent mineral richness, though it is slightly more acidic than the soils of Buon Ma Thuot. The higher altitude of 900 meters exposes the plateau to cooler mountain winds, creating a micro-climate where temperatures fluctuate significantly between daytime sun and cold nights.

This thermal swing slows down cherry growth, resulting in highly concentrated beans. The intercropping with aromatic pepper vines and fruit trees also infuses the surrounding soil with a rich biodiversity of organic matter, giving the coffee roots access to a diverse nutritional profile.

Artisan Processing & Green Sourcing

Dak Nong farmers are pioneers in natural organic composting and water-saving processing technologies. The harvest is carried out manually by family groups who selectively hand-pick the ripe cherries.

Due to the diverse intercropped farms, the harvest is processed using a mix of **Natural and Semi-Washed (Pulped Natural)** methods. The pulped natural process removes the outer skin but leaves the sweet fruit mucilage on the bean during drying, allowing the bean to absorb sweet, fruity notes while maintaining a very clean, uniform finish.

Sensory Profile: Spiced, Balanced, and Aromatic

Dak Nong Robusta displays a unique, highly characterful sensory profile. It possesses a balanced, medium-to-heavy body with a pleasant complexity that is highly sought after by specialty roasters.

The cup opens with warm, inviting notes of **cinnamon and wild mountain herbs**, transitioning into a comforting mid-palate of **roasted peanuts and rich dark cocoa**. The finish is remarkably clean, featuring soft woody undertones and a pleasant, lingering sweetness. It represents the perfect harmony between nature and human stewardship, delivering a sustainable cup of coffee that supports Dak Nong's highland biodiversity.
